Comparisons by the cattle industry of Limousin beef to beef produced by other breeds has consistently proven that Limousin does excel in producing meat that is genetically trimmed, not trimmed with the help of a butcher's knife. This ability to efficiently convert grain to lean red meat, not fat, was recently documented by research conducted at Texas Tech, lowa State, and Texas A&M Universities, which showed that Limousin beef had an average of 2 1/2 percent fat (in the ribeye muscle) compared to an average of 5 percent fat for other Choice beef, and 9.5 percent fat for similar Prime beef.
