Recipe from October 2004 Progressive Dinner

 

STUFFED SPINACH BALLS

 

2 (10) ounce packaged frozen chopped spinach

6 eggs

2 1/2 cups herb-seasoned stuffing mix

1 cup grated Parmesan cheese

1/2 cup butter, softened

 salt and pepper

 

Cook spinach according to package directions. Drain thoroughly. In bowl, beat eggs. Add spinach, stuffing (and seasoning mix if part of the package), grated Parmesan cheese, softened butter and some salt and pepper. Mix well. Form the mixture into 1 inch balls. Arrange the balls on cookie sheet. Cover and freeze. Take directly from freezer and bake in preheated oven at 350 degrees for 15 to 20 minutes (until firm to touch). Or: Bake immediately at 350 degrees for 10 minutes or until heated though. Serve warm. Makes about 50.
