SEASONED BROWN RICE

Vegetable Cooking Spray

2 tbs chopped onion or you can use minced onion

1/4 tsp. minced garlic

1 cup uncooked brown rice

1-1/3 cups water

1 (10 3/4 ounce) can chicken broth, undiluted

Dash of pepper

1 bay leaf

1 tbs chopped fresh parsley

1/4 tsp ground thyme

 

Coat a medium saucepan with cooking spray. Place over medium heat until hot; add onion and garlic, and saute until onion is tender. Add remaining ingredients, and bring to a boil. Cover, reduce heat, and simmer 45 to 50 minutes or until rice is tender and liquid is absorbed. Remove mixture from heat and discard bay leaf. Yield: 6 servings.
