Hillbilly Cake (received
People`s Choice Award)
Part 1
1 cup raisins
1 cup water
1 cup sugar
1/2 cup butter or margarine
1 tsp. cinnamon
1 tsp. allspice
Bring to boil and cool.
Part 2
2 cups flour
1 tsp. baking soda
1/2 cup chopped pecans
Stir flour mixture well. Blend parts 1 and 2 together and pour into a 9 x 13 baking pan. Bake 20 minutes at 350 degrees. While cake is baking, mix and cook the icing for the top.
Part 3 Icing
3/4 cup butter or margarine
1-1/2 cups brown sugar
3/4 cup coconut
1 cup chopped pecans
1-1/2 T. flour
(3 oz) milk
Blend icing ingredients well over low heat. Cook until butter and brown sugar are melted. Do not boil. Remove from heat and pour over cake. (Cover corners well.) Bake an additional 20 minutes at 350 degrees.
