GIANT SOFT GINGER COOKIE

 

 

4 cups flour

2 teaspoons ground cloves

1 tablespoon baking soda

1 teaspoon salt

4 teaspoons ground ginger

2 teaspoons ground cinnamon

2/3 cup margarine

2/3 cup shortening

2 cups sugar

2 eggs

2 tablespoons molasses

2 tablespoons light corn syrup

Cinnamon-sugar mixture to roll cookies

 

Combine flour, soda, cloves, salt, ginger, cinnamon. Do not sift. Stir to mix well. Beat together, butter, shortening, and sugar until fluffy. Stir in eggs, molasses and light corn syrup until well blended. Add flour mixture to creamed mixture. Beat until smooth and pliable. Pinch off by the rounded tablespoon full. Roll in cinnamon-sugar mixture. Place on un-greased baking sheet. Bake at 350 degrees for 15 minutes of until cookies have cracked, are firm but feel soft.
