CHICKEN SALAD SPECIALITY
3 cups cubed chicken or turkey
1 cup celery
1/2 cup small seedless grapes (white)
1/2 cups pecans or almonds chopped
1/4 cup heavy cream (whipped)
1/4 cup flaked coconut
2 tablespoons capers
1/4 cup mayonnaise with 1 T. prepared mustard
Lightly toss chicken with celery, grapes, nuts, coconut and capers. Add chilled mayonnaise mixture to whipped cream blending thoroughly. Add to chicken mixture. Cover and chill thoroughly before serving. Serve on a lettuce leaf.
