BANANA NUT CAKE

2-1/2 cups flour

1-2/3 cups sugar

1-1/4 teaspoons baking powder

1 teaspoon soda

1 teaspoon salt

2/3 cup shortening

1/3 cup buttermilk

1-1/4 cup mashed bananas

2 large eggs

2/3 cups chopped walnuts, can use pecans

a second 1/3 cup buttermilk

 

Sift together flour, sugar, baking powder, soda and salt. Add shortening and 1/3 cup buttermilk and mashed bananas. Add the other 1/3 cup buttermilk and the 2 large eggs. Fold in nuts. Bake in either two layers or in a 9x13 pan at 350 degrees for 35 to 45 minutes.

 

FROSTING

 

1/2 cup butter

2 cups powdered sugar

1 egg white beaten stiff

Vanilla

 

Cream butter and sugar. Add beaten egg white and vanilla. Beat until smooth. Spread on cake.
