SAUTEED DAY LILY BUDS (Serves 4-6). 2 quarts Day Lily buds, 3 tbsp butter,
1/4 cup finely chopped scallions or onions, 2 cloves crushed garlic, 1 tbsp
minced parsley, Salt and pepper to taste. Wash, drain, and dry the Day Lily
buds. Melt butter in an 11-inch skilet; add the Day Lily buds and scallions
and saute lightly for 5 minutes. Add the seasonings, and saute, mixing slowly for another 5 minutes. Serve hot. This is an excellent vegetable to
go with any main course.
