Reverse Information: JERUSALEM ARTICHOKE (Helianthus tuberosus) -
Uses: Potato salad, pickle. One of the best of the wild flower plants, the
fresh tubers can be substituted for potatoes; after light cooking, they can
also be sliced and added to salads, or parboiled briefly and pickled in wine
vinegar. In a stir-fry, they stay crisp, rather like water-chestnuts. Located
while still in flower, Jerusalem Artichoke tubers are abundant and easy to gather
during fall and winter whenever the ground is unfrozen. Flowers: August-October.
Habitat: Waste ground, damp thickets, fields, locally abundant.
