Red Cabbage with Apples
Slice one head of red cabbage. Peel, core and slice 4 flavorful apples.
Cut an onion into thin slices. In a deep skillet, melt 2 T butter or
margarine and 2 T oil. Saute the onions until soft. Fry the apples
until slightly tender, stirring frequently. Shake on 1/2 t salt and a few grinds
of pepper, plus 3 T of sugar or Splenda and 2 T vinegar. Spoon into a greased
baking dish and add the cabbage. Pour 1/2 c beef broth evenly over the cabbage.
Bake at 300° for 1 -2 hours, or until the cabbage is tender. Remove when done,
place in serving dish and sprinke on caraway seeds.
